HERRINGS FO
Skewered Grilled Herrings with Lemon Juice.
Grilled fresh herrings are, of course, as
delicious for breakfast as for any other
meal and you can run many variants on
this dish (see page 8).
GRILLED HERRINGS WITH
PARSNIPS.
INGREDIENTS : I herring per person, a few
boiled parsnips, a few breadcrumbs and a
little beaten egg. Fat for frying. Salt and
pepper. Parsley.
method : Cut the parsnips lengthwise
in quarters, egg and breadcrumb them, fry
a golden brown. Grill the herrings as on
page 8, serve with the parsnips ; you have
no idea how good the combination of
flavours can be.
GRILLED HERRINGS WITH
LEMON JUICE.
ingredients : i herring per person. A
little butter and lemon juice.
method : Skewer the heads and tails
together. Grill as on page 8. Pour over
the lemon juice and serve.
GRILLED HERRINGS WITH
TOMATOES.
INGREDIENTS : I herring and I tomato
per person. A little butter. Parsley. Salt
and pepper.
method : Cut the tomatoes in half and
fry in a little butter, taking care not to
break them. Grill the fish as in the recipe
on page 8. Serve surrounded by the
tomatoes.
